Avocado Caprese Skillet Chicken Recipe
Easy skillet chicken recipe! This Caprese Chicken might just leave you speechless. Caprese combos of tomatoes, basil, fresh mozzarella and balsamic vinegar are really dreamy and then you add avocado to the mixture and everything becomes very delicious!
Here you get layer after layer of delicious flavors and everyone will love it.

Ingredient
  • 2 tablespoons of olive oil
  • 3 Tbsp balsamic glaze (I use Bertolli)
  • 4 avocado slices (from large but ripe avocados)
  • 1/3 cup of chopped basil ribbons
  • 2 (10 - 11 ounces each) boneless skinless chicken breast, buttered and halved
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion
  • 1/2 tsp Italian spice
  • Salt and freshly ground black pepper
  • 6 ounces of fresh mozzarella, cut into 8 slices
  • 2 medium cooked tomatoes, sliced


Instructions
  1. In a bowl, mix garlic powder, onion powder, Italian seasoning, 1/2 teaspoon salt, and 1/4 teaspoon pepper.
  2. Apply dry chicken with tissue paper then sprinkle the mixture evenly on both sides of each piece of chicken meat. Heat the olive oil in a 12-inch skillet over medium-high heat.
  3. Add chicken (cover pan with splatter screen if available) and cook until golden brown, about 4 - 6 minutes.
  4. Turn and cook the opposite side until the chicken is almost cooked (around 160 in the middle), reduce the temperature slightly if needed, about 4-5 minutes.
  5. Add two slices of mozzarella to each slice of meat, followed by one slice of avocado, and 1-2 slices of tomatoes.
  6. Cover the pan with a lid, return to heat and let it cook 1 - 2 minutes longer until the cheese melts and the chicken goes in the middle.
  7. Sprinkle chicken with pepper, drizzle with balsamic glaze and sprinkle with fresh basil. Serve warm.
