Creamy Butternut Squash Alfredo Pasta
Butternut Pumpkin Pasta Cream is one of my favorite butternut pumpkin recipes! Seasoned with sage and fresh thyme, then garnished with salted bacon, this gluten-free pasta recipe is delicious, healthy and truly addictive. The perfect quick dinner idea that screams falling comfort food.
Creamy Butternut Squash This pasta has fresh sage and thyme that permeates the entire butternut squash pasta sauce and is made more creamy with a touch of milk then mixed together until smooth as silk. To cut a little sweetness from the pumpkin, I finish this dish with a little crispy meat on top, the sweet salty combo and the delicious taste of this pasta will really make you want more after every bite.

Ingredient
  • 2 tablespoons of butter
  • 1 cup 2% milk (or almond milk)
  • 1 1/2 tablespoons diced fresh thyme
  • 12 ounces of thin gluten free spaghetti paste
  • 3 strips of smoked apple
  • 1 cup diced onion
  • 1 clove of garlic
  • 3 cups of butternut squash cubes
  • 1 cup of low sodium chicken broth
  • 1 1/2 tablespoons of diced fresh sage
  • salt to taste


Instructions
  1. In a large skillet add butter and shallots. Saute until slightly soft, about 1-2 minutes.
  2. Next add the garlic, stir-fry for 30 seconds, stir and add the butternut pumpkin, chicken broth, sage, and thyme. Stir and cover. Cook until the butternut squash is tender, about 8-10 minutes.
  3. When the pumpkin is soft, add the pumpkin to the food processor with enough milk and salt. Blend until smooth.
  4. Meanwhile, heat the pan to a medium heat, add diced bacon to the pan and stir-fry until the bacon is crispy. Around 4-5 minutes. When the meat is cooked, place it on paper-coated tissue so the fat dries.
  5. Boil a large pot of water. Add gluten-free paste, cook according to instructions, (6-8 minutes) do not cook.
  6. Drain the pasta and add the butternut pumpkin sauce to the pasta, stir well and add crispy bacon. Presenting!
