Chocolate Icebox Cake Recipe
The chocolate icebox cake is very successful! A layer of chocolate ganache, chocolate mousse and chocolate graham crackers topped with chocolate sauce for a decadent treat that will make you a chocolate coma.
This time i decided to use chocolate. I mean, when are tons of chocolate not a good idea?
Layers like chocolate mousse are not real mousse, but the texture is very much like a mousse. That is also delicious. Chocolate ganache is thicker, so they contrast with each other well.
Chocolate graham biscuits help to give the structure of the cake and put everything together. Plus, they have more chocolate.
This cake is very successful. All my taste testers are fans. Some of my favorite taste testers are the children of my co-workers and i have heard there is debate about who gets the last piece of this special cake.

Ingredients
Chocolate Cream and Whipped Topping
  • Chocolate sauce
  • 1 1/2 tablespoons cocoa
  • 1/4 cup powdered sugar
  • Mini chocolate chips
  • 14.4 ounces box of Graham Chocolate Crackers

Chocolate Mousse
  • 8 ounces of cold whip (or homemade whipped cream *)
  • 8 ounce cream cheese, room temperature
  • 1/2 cup sugar
  • 3 tablespoons milk
  • 1/2 cup of cocoa

Chocolate Ganache
  • 3/4 cup of heavy whipped cream
  • 11 ounces of semi-sweet chips or milk (about 2 cups)


Instructions
  1. To make chocolate mousse
  2. Mix cream cheese, sugar, and milk together in a stand mixer bowl, or with a hand mixer. Mix until completely mixed.
  3. Add cocoa and stir until smooth.
  4. Fold the cold whip.
  5. To make chocolate ganache
  6. Place brown chips in a metal bowl.
  7. Microwave thick cream until it begins to boil. Remove from the microwave and pour over the chocolate chips.
  8. Cover the bowl with a suggestion wrap for 5-7 minutes.
  9. Beat chocolate and cream until smooth.
  10. To make whipped chocolate cream
  11. Add whipped cream, cocoa, and refined sugar to a large mixer equipped with a whisk.
  12. Whip at high speed until a rigid peak is formed.
  13. Putting all together
  14. Place a layer of graham crackers at the bottom of the 9 × 13 pan.
  15. Top graham crackers with half the mousse mixture and spread evenly.
  16. Spread half the chocolate ganache over the mousse mixture and spread evenly.
  17. Place another layer of graham crackers on top of the chocolate ganache
  18. Spread the rest of the mousse mixture over the graham crackers.
  19. Pour the remaining ganache over the mousse mixture and apply it evenly.
  20. Top ganache with one more layer of graham crackers.
  21. Top cake with chocolate whipped cream and spread evenly.
  22. Finish cake off with chocolate sauce and mini chocolate chips, if desired.
